Delivery Men
Sunday, December 19
Here is my neighborhood Christmas gifts delivery team! Two men ready to brave the elements and deliver some pumpkin-cranberry bread to the neighbors! Dexter was estatic about getting in the red wagon, and Sander was sweet enough to give me a few minutes alone at home.
Ho. Ho. Ho.
Here is the recipe if interested:
Pumpkin Bread
Makes one loaf
1 cups unbleached all-purpose flour
1 teaspoon table salt
½ teaspoon baking soda
½ teaspoon baking powder
1 teaspoons ground cinnamon
1 teaspoon ground ginger
¼ teaspoon ground nutmeg
1 can (15 ounces) pumpkin puree
8 Tablespoons unsalted butter, melted
1 cups sugar
2 large eggs
½ teaspoon vanilla extract
1 cup walnuts or pecans, toasted and chopped coarsely
1 cup dried cranberries
1. Adjust oven rack to middle position; heat oven to 350F. Spray bottom & sides of a nonstick 9x5x3-inch loaf pan with nonstick cooking spray.
2. Whisk flour, salt, baking soda, baking powder, and spices together in a medium bowl.
4. Melt butter and set aside to cool.
5. Add sugar, eggs, pumpkin and vanilla and mix until just combined.
6. Add to flour mixture, mixing until just combined (If using, fold in nuts by hand with a plastic spatula after the flour is mixed in.) Pour into loaf pan and smooth out the top with the plastic spatula.
7. Bake 45-50min or until skewer inserted in middle comes out clean.
8. Cool in pan on rack for 10 minutes. Remove from pan and cool at least one hour on rack before serving.
